Greek Style Salad

Since this time of year is so great for all those heirloom and home grown tomatoes, I think there is nothing better than a fresh salad! Serves 3-4 as a side dish or 2 as a main dish.

Ingredients:

3-4 heirloom or vine ripened tomatoes1 - preferably yellow and red, sliced in bite sized chunks
1/2 Red onion, thinly sliced2
1 Avocado, sliced in 1/2 inch cubes
5 oz Feta cheese, crumbled3
Extra Virgin Olive Oil & Good Quality Balsamic Vinegar to taste
Celtic Salt & Pepper to taste

Mix everything together in a large bowl and serve.

Note: If you want to make this a one-dish-meal, add some already cooked chunks of chicken.

1 Remember to always leave tomatoes on the counter and NOT in the refrigerator as the ripening stops and the flavor changes.

2If the onion is too strong, slice it and place it in ice water for about 15 minutes. This will bring out the sweetness and soften that strong taste. Drain well before adding to salad.

3I prefer a sheep's milk feta as it has a nice taste and right amount of saltiness. My favorite is Valbreso Feta from France. It is 100% pure sheep's milk. I find it at Vitamin Cottage.
