This is a healthy way to start off the New Year. If you are anything like me, you feel the need to put some really healthy food back into your body. Chard is one of those amazing greens with lots of health benefits and is delicious. If you like, add some chunks of previously baked chicken to make this a one dish meal.
Ingredients:
1 TBPS extra virgin olive oil
1 TBSP butter
2 cloves garlic, minced
2-3 shallots (or 1 small onion), chopped
1 sprig fresh rosemary, chopped
1/4 C sherry
1/4 C chicken broth or water
1 large batch of chard, chopped into 1" slices
Directions:
In a large sautè pan, heat oil and butter over medium heat. Add garlic and shallot and cook until the shallot becomes transparent, approximately 3-4 minutes. Add the sherry, broth, and rosemary and continue to cook for 2 minutes. Add the chard, cover the pan and cook until it wilts, about 5 minutes, stirring occasionally.
Serve and enjoy!
Note: if adding chicken, do so when adding the liquids and rosemary.
